Default Fried Chicken

It has to be done just right. KFC? okay, but not my style. There's a South Ga. joint called Maryland Fried Chicken that makes Kentucky look Canadian.

Anyway, Fried Chicken can be a heck of a tailgate dish. You can pick it up on the way in for an early game, eat it warm, and enjoy the cold leftovers after Auburn beats up on uga. The next morning, after she puts her robe on, you can enjoy the rest, cold, with Friday's pepperoni pizza (for jadennis).

I recommend hoppy ale, pregame; pilsner, postgame; and bloody beer Sunday mornin'.

Frying chicken is my Waterloo. I have tried a hundred times...but I just can't seem to get it right.

But I do agree, one of the best things ever when it's done right. It's not even that shabby when it isn't.

(1) brown paper bag
(1) bag of flower
(1) can of Watkins Black Pepper
(1) cast iron skillet (w/ top) 1/4 filled w/ lard/crisco/canola oil

Chicken: I prefer to buy a whole bird and cut it up myself.....some folks prefer some parts of the bird more than others (legs for example) so you can buy whichever pieces float your boat.

put flower into brown paper bag w/ a lot of pepper.....add chicken piece and shake vigorously.....repeat for each piece of chicken.

add floured chicken to cast iron skillet (w/ grease/oil warmed to medium/medium low heat).

sprinkle w/ more black pepper. cook slow (DO NOT GET IN A HURRY) turn as needed.
as chicken is just about done...cover and let simmer til fried to the consistency you like it.

get it out, eat it, enjoy it (don't forget to add a little milk, flour and more pepper to the crinkles and grease to make a gravy to put on the homemade biscuits).

I recommend Sweet Tea as a drink of choice w/ this meal.

ps: only thing better than fried chicken is my homemade chicken and dumplings.....but I aint telling anyone how to do that.......you just have to come over and enjoy a pot w/ me............might even have some peach cobbler and ice cream for desert

pps: if the above is too difficult....goto Wally World, buy a deep fat fryer (needs to goto 400/425 degrees) follow the above flouring technique using legs only.....and drop three legs at a time into the deep fat fryer......they float when they are done....pull 'em out, let 'em cool just a bit and enjoy.....

That is just about perfect, 89.

I also enjoy a lot of pepper. Hot, black and spicy legs will always do the trick. But, I am not very discriminating when it comes to bird parts.

I think the problem is that I DO get in a hurry...and too hot, I guess. Too done on the outside and not enough on the inside. There seems to be no instant gratification where fried chicken is concerned.
I'll try it your way.

ugahater, I am interested to know what you know about black legs.

getting in a hurry does seem to be your problem based on your comments above........gotta cook it on even heat very slow.....my grandmother use to take all morning just to have the chicken ready by 1 pm for lunch.

and you cannot cook it in a teflon pan....just will not work....

I guess what I am trying to say is that today's culture is very much anti-fried chicken........in a hurry with easy clean-up

gotta have the time and the correct equipment.

ps: during football season..we will sometimes grill out on Friday night and at the same time fry the chicken for Saturday's tailgate........good times talking and cooking on Friday night followed by one-day old fried chicken (brought to room temp by eatin time) and AU football....makes for one fun weekend.

Thanks for sharing, eagleair89. Your recipe reminds me of my paw-in-law's cooking, I miss him and his cooking still after all these years. But he and I both shared a strange liking for cold food; like cold pizza for breakfast, and cold fried chicken right out of the ice chest, along with the cold beer, for tailgating.

But then again, there are several dishes best served cold...

It's late and I just remembered a AU football/fried chicken story from a while back......

1983

4 of us are headed to Athens to see if the Tigers can end a three year losing streak to the dawgs and stamp their first ticket to New Orleans since 1972 and win their first SEC Title since 1957.........

well we had stayed up the night before frying chicken and had wrapped it in paper towels and aluminum foil and placed it in the cooler w/ some cold co-colas ready for the trip. Regardless of the outcome...we planned on eating well.

Well, the guy who was driving had a conversion van....real comfortable w/ 4 captains chairs. Dad and the guy driving up front...me and my uncle in back (this was a really bad idea )

Normally, we would put all the food and drinks in the trunk, but seeing that we were in a van the chicken and cokes were in the floor between me and my uncle...........

Needless to say.........my uncle and I were overcome by the aroma of the chicken and less than 20 miles out of town (and a helluva long way from Athens) all the chicken was gone and most of the co-colas......

When we got to Athens, Dad was very much ready for some fried chicken.............but alas he had to settle for a Sanford Stadium dog...............

Thank God we won........or I very well might not be here today telling this tale.
